A third of cheese and butter in Russia is sold through the HoReCa sector
The catering market is the second largest channel of sales of dairy products after retail. At the same time, the ratio of sales figures in retail and in HoReCa differs not only for different product categories, but also for different countries and economic zones, the review notes.
According to the European dairy trade Association (Eucolait), 45% of dairy products in Russia are sold through the food service segment. Our country is among the countries in which the consumption of cream through HoReCa channels exceeds the volume of its purchase at retail. A third of the cheese and butter sold on the Russian market also goes into catering.
According to Rosstat on December 1, Russian cheese production from the beginning of the year amounted to 478 thousand tons, which is 10.1% more than in the same period of 2018. Production of butter for 11 months of the year increased by 0.4% to 239 thousand tons.
Production of drinking milk decreased by 1.6% to 4.9 million tons.
