Andrey Dakhnovich: the Russians need a mature cheese market

Andrey Dakhnovich, co-owner of the company "Foodland", which includes Elansky cheese and butter factory and Semikarakorskiy cheese-making plant, expressed his opinion to The DairyNews about the situation on the market of cheese and dairy products of the Russian Federation. According to the expert, "both producers and consumers need a developed mature market, where there would be fair competition between producers for the loyalty of the buyer".
The situation, according to Andrey Dukhnovich, is complex. In particular, due to the pressure of surplus dairy products such as milk powder, butter and cheese on the market.
There are several reasons that predetermined the current state of the market, the expert stressed. First, the weak purchasing power of the population, which affects the overall level of consumption of dairy products in the country. Secondly, the growth of fresh milk production in Russia and Belarus and, accordingly, the volume of its processing. Thirdly, a significant amount of dairy products prohibited for legal import into the territory of the Russian Federation are exported to the market.
"The combined effect of the described factors turns the dairy market into a surplus. The cheese market in countries with a developed culture of consumption is traditionally 30-50% of the total dairy products. In Russia consumption of cheese, including cottage cheese (according to the international classification it is included in the category of "fresh cheese"), this figure will be at least 40%, which means that the influence of the state of the cheese market on dairy market in general, is huge", said Andrey Dakhnovich.
According to the expert, it is necessary to remove falsified products from the market.
"We cannot deceive the buyer. There is nothing worse in the market than the consumer's distrust of the product category, and it invariably arises if the expectations of the buyer are deceived. I am not a supporter of the fight against products in which dairy fat fraction is replaced with vegetable one. For those who are limited in finances, the opportunity to buy cheaper products is fundamental, but the buyer should be clearly informed about what he is buying, otherwise there is deception, which is absolutely unacceptable", - said Andrey Dakhnovich.
According to the expert, the Russian shelf needs a wide range of cheeses. The embargo has affected the market's capacity for the worse. It is difficult to return the situation back by filling the stores with the former variety of products, but of domestic production. This process takes years and, nevertheless, one can’t but notice the work and efforts of domestic and Belarusian cheese-makers.
"The products should be tasty and of high quality. As a milk processor, I am optimistic about the future, as it is obvious that in Russia the quality of produced milk is growing, as well as the development of its processing. Most enterprises develop from a technical point of view, and technologically, and it is a guarantee of the quality of the final product", - summed up Andrey Dakhnovich.
