French cheeses in Bryansk province

The plant LLC “Zhukovskoe moloko” is included into group of companies in Bryansk region and since last year carries out production of elite blue cheeses in accordance with French recipe. The correspondent of The DairyNews visited the company as part of a press tour and found out the details of the site development.

The company produces a line under the brand WhiteCheese from Zhukovka. Among them there are the famous French varieties Camembert and Brie. Cheeses are presented on the shelves of trade networks "Auchan", "Lenta", "O’Key", "Metro", "Perekrestok", "Magnit", "Billa", "Globus", "Bahetle", "Europe", "Zhuravli", "Kalita". Also, products are supplied to the companies of the HoReCa sector. Geography of supplies is from Kaliningrad to Yuzhno-Sakhalinsk. The capacity of the plant is about 60 tons of cheese per month.

The company is equipped with French and German equipment. French double-layer paper is used in the packaging of the finished product.

Raw materials are supplied from our own farms, and the mold is specially purchased by the recommendations of the technologist in France.

The DairyNews talked with the founder of "Zhukovskoe moloko" Konstantin Malykhin.

DN: Tell us, please, what is the company like today?

KM: We are a group of companies. We have four production sites, including the Bryansk dairy plant and two farms that accumulate raw milk and deliver it to our sites.

In addition, the group includes a trading house, through which we sell our products.

"Zhukovsky dairy plant" is my project.  I try to travel, to be abroad. After the embargo, I began to miss those cheeses that I love. When these products disappeared, there was a thought that it is necessary to make them. I didn't see any problem with that. We began to solve this problem step by step: we bought a regular district plant, located in Zhukovka. At that time it produced whole milk products.

We studied the European experience and tried to construct a plant similar to European companies. They have many years of experience, they accumulate it. We decided to translate the European experience into our own production. I think we did it well.

The brand as well as the packaging solution I made myself.

The economic indicators of the site in Zhukovka are difficult to compare with our "Bryansk dairy plant", which produces conventional products for every day (milk, kefir, butter). There, the turnover reaches 350 million rubles per month.

Here the turnover is a few times less; besides, the product price is 1000 rubles per kg, which is higher than the average price segment. Despite this, we are constantly growing and aimed at improving the culture of consumption of elite cheeses.

We plan to expand the product portfolio, we want to start production of ricotta. For this product, the closest competitor is Bryansk "Umalat".  Until the end of the year we intend to launch our ricotta in the trading network.

DN: How do you assess the prospects of the cheese market in general?  

KM: The cheese market is a constantly growing segment. It has quite optimistic prospects. On the Russian market there are constantly some new cheeses. Accordingly, the overall market is growing. The culture of consumption is also developing. The main problem is the quality of the product and raw materials. We still need to work on quality and improve it.

DN: Do you have enough your own raw materials?

KM: Not always. Due to the seasonality of production there is a winter shortage of raw materials. But we are working to eliminate it.
