How to produce quality milk? This will be told about at the XI Dairy Olympics
The question "how to produce high-quality milk" will be answered by the executives of large dairy enterprises, such as LLC "Wimm-Bill-Dann", "Erhmann", GC "Moloko Group".
– The quality of milk in the country can be called average. Raw milk mainly corresponds to the parameters of Technical regulations, but these requirements for milk in Russia are lower than, for example, in the European Union. In addition, our milk loses in term of the quality composition, the composition of solids. Average fat and average protein in the European Union is much higher even with the basic evaluation of milk. We definitely have much to strive for, – commented the Director of the Russian Dairy Research Center (RDRC) Mikhail Mishchenko.
According to the expert, in order to make the product better, it is necessary to increase the requirements for milk, which the plant buys. It depends on the final products to be produced.
– If the end consumer becomes more demanding and is ready to buy, for example, natural butter 82% fat and not spread or "Krestyanskoe" butter, the plants will need more fat milk to produce high-quality butter. The consumer should be ready to pay for a good product, the dairy producer should be able to meet this demand and demand the appropriate level of raw materials from suppliers. Then milk quality will increase, - concluded Mikhail Mishchenko.
