Kostroma region: the potential for growth at small cheese factories
"In Kostroma region there is a potential to increase milk processing and production of dairy products. The deficit of processing capacities in the region is only 27 thousand tons, this is a good base for the opening of small enterprises, - commented Director of the Russian Dairy Research Center Mikhail Mishchenko.- In Kostroma region it is possible to develop the production of cheese on the basis of small dairies, while developing agricultural tourism. However, an important condition for such development should be a healthy investment climate in the region".
In 2017 the enterprises of Kostroma region produced 87 thousand tons of raw milk, which is 2.3% more than in 2016. Agricultural enterprises increased production by 1.5% to 81.7 thousand tons. Peasant farm holdings increased their production volume by 16.4% to 5.3 thousand tons.
The number of enterprises engaged in milk production in the region is growing due to the increase of the number of peasant farm holdings. In 2017, there were 66 peasant farm holdings producing milk in Kostroma region (+5 new farms compared to 2016) and 90 agricultural enterprises engaged in milk production (-1 agricultural enterprise compared to 2016).
At the same time, the region still remains deficient in terms of self-sufficiency in raw milk. In 2017 the deficit of milk amounted to 29 thousand tons, which is 1.75% higher than in 2016. Milk consumption is growing every year; in 2017 the value reached 180.32 kg per capita per year, which is 2.9% higher than in 2016 and 11% higher than in 2013.
The deficit of processing capacity in the region is 27 thousand tons, 16.8% below the level of 2016. The volume of milk processing and production of dairy products is growing in the region. In 2017 enterprises of Kostroma region processed 60 thousand tons of milk, which is 14% more than in 2016, and produced 22% more dairy products in terms of milk, almost 65 thousand tons. The region is increasing the production of cheese and butter. At the same time, in 2017 the production of whole-milk products fell by 40%, the production of cottage cheese decreased by 7%.
Production of butter increased by 6% and amounted to 899.2 tons.
Cheese production in 2017 amounted to 3.2 thousand tons, almost three times more than in 2016. There is a growing number of cheese factories, including small dairies, which create demand for raw milk and revive the glory of Kostroma region as a cheese region. In the region there is a so-called Cheese exchange, where local cheese producers can sell their products.
