Kuban plans to increase blue cheese production by 10 times

Cheese makers from Krasnodar Region (Russia) plan to increase blue cheese (Dor Blue analogue) production by 10 times by autumn 2015. This is according to Tatiana Sadovaya, Kaloriya Deputy General Manager.
The company has recently finished reconstruction what allowed to increase production volumes from 200 to 1000 kg. Production capacity is set to grow additionally by two times after a new production unit is launched. The company also plans to increase white mould cheeses from 500 to 1000 kg and thus to cover the region’s demand in this kind of cheeses.
According to the local Ministry’s data, in 2014 regional companies produced 21,800 tons of cheese and cheese products what is 0.25% more compared to 2013 level. Total volume of raw milk processed in Krasnodar Region reached 766,200 tons (+105% against 2013).
