LLC "Krasny Mayak" launches its own processing with the capacity of about 4 tons per shift
According to Finogeev, it is more correct than wrong to be engaged in own processing. In addition, in this case it becomes possible to control the quality and be responsible for the product.
- Processing is a separate business: it is not enough just to process milk; you still need to sell the product. This always means additional expenses for the construction of the plant itself, as well as for new personnel and marketing. It turns out that as the owner you need to look in another direction. However, everything is paid back, – said Vasily Finogeev.
As the Director of "Krasny Mayak" said, that is the reason why he has never seriously thought about the necessity of own processing before.
- Unfortunately, the profitability of raw materials is reduced; milk is getting cheaper all over the world. It turns out that no matter how well you work, profitability is steadily declining – just because it happens all over the world. It is also decreasing in processing: mostly under the influence of networks, – said Finogeev.
The ideal option is to build your own chain of production, processing and sales to the end user. Market players, according to Vasily Finogeev, are united by one common task – the creation of a range of quality products available to the consumer.
Talking about how LLC "Krasny Mayak" came to the need to organize the processing of raw materials, Vasily Finogeev said that earlier the farm cooperated with the processing company under the terms of co-packing: raw milk was sold to the processor, they processed the raw materials into cottage cheese, sour cream, butter and cheese, which were later returned to "Krasny Mayak" impersonal.
- Earlier, we cooperated with the processor: they made cottage cheese, sour cream, butter, cheese from our milk. Products were returned to us impersonal - it's called co-packing. We were satisfied with our mutual work and sold the products under our own brand. We were thinking of taking the brand seriously. But in summer our plans changed: the price of milk fell, we tried to persuade the processor to reduce the sale price of raw materials, but they refused. And we noticed that all processors in the market behave this way, because the price becomes higher. So it was decided to build a small processing plant to cover the needs of our 16 pavilions. In the future we will evaluate the profitability, calculate the benefits, costs and margins. We have a certain plan, I won't talk about it yet, – Finogeev told.
In March, according to the Director of the enterprise, the missing equipment will be delivered to the farm. Now work is carried out in a test mode. The range includes cheese, cottage cheese, sour cream and butter. As noted by Finogeev, theoretically it is possible to produce milk, baked milk or kefir, but in "Krasny Mayak" they decided not to spread.
– We plan to process 3-4 tons of milk per shift. It's new to us – we've never done anything like this before. That is why it is good to start with a small shop, it is easier to learn from own mistakes. As for the brand, we have not decided yet. Meanwhile, the products are under the brand name "Krasny Mayak", but this is not the final version. Our pavilions are located in the country; the consumer knows the product under that name, – concluded Finogeev.
According to the Russian Dairy Research Center (RDRC), in 2018 the number of cattle in LLC "Krasny Mayak" was 4519 heads, including 2132 milking cows.
