LLC Rosa from Smolensk region will release a trial batch of cheese "Chechil" this week
Alexander Mandrusov, General Director of LLC Rosa, noted that in March, the daily volume of milk processing at the enterprise was 10 tons, and now this figure has almost doubled.
- In addition, equipment for the production of "Chechil" cheese has been purchased and already delivered to the factory. To date, the technology of its production has been worked out. We plan to sell this new product in local retail chains of Smolensk, with which we are already negotiating. In the future, we expect to supply to retail outlets located throughout the region, said Alexander Mandrusov.
According to Chief technologist of the plant Ekaterina Pakhomenko, currently Rosa produces two types of cheese – "Cream" and "Light".
- At the same time, we plan to expand this range. At the end of the week, a trial batch of "Chechil" cheese will be made, for the production of which equipment is currently being installed, and in the near future, it is planned to work out the processed cream cheese. I would like to inform you about the specifics of the cheese production shop. There are 3 cheese producers, presses, salt pools, equipment for washing and drying cheeses, as well as maturation chambers, where the product maturation process takes place during the month. Employees using a knife perform cutting cheese heads into portions of a certain weight manually. However, in the near future, it is planned to purchase an automatic line for cutting cheese with a fixed weight. After that, the finished cheese is packed on a thermoforming machine in a vacuum package, she added. - Since September, the production of cheeses under their own brands of major manufacturers, including the well - known company NevaMilk - it has already signed a contract.
