Mikhail Mishchenko: Russia does not have enough fat

Mikhail Mishchenko, Director of the Russian Dairy Research Center (RDRC) noted the lack of fat and the potential of butter production in Russia during the conference "Realities and prospects of development of the dairy industry. Trends in packaging industry" organized by the Russian company "Lambumiz", specializing in the production of cardboard packaging, reports The DairyNews.
"In 2016 Russia produced 249 thousand tons of butter. Can we produce more? Of course!" the expert stressed in his speech.

The Director of the RDRC also said that "the main problem in Russia is in the quality of raw milk. It is necessary to work to increase fat and protein parameters. According to official statistics, the average fat content in milk in Russia is 3.6; it is quite a low figure compared to European one."

"In European countries the average fat content is equal to 4.0%. If the average fat content in Russia was 4.0%, we could produce butter at the level of 700 thousand tons," the expert added.
