Large volumes are not interesting to me. If you process 50 tons of milk or more, you need to build a brand, and this is other means and forces.
John Kopiski also noted that Russia certainly has milk for cheese. The main thing is that it is stable.
- For me, the quality of milk is one issue, for example, we have SCC less than 200 000 in milk. For example, I am interested in high-protein milk - at least 3.5-3.6%. This direction should be developed, but even today there is milk suitable for cheeses", the expert added.
