The use of milk for cheese production is growing - Mikhail Mishchenko
"Today, the market volume is equal to what it was before the embargo. About a million tons of cheese are present on the Russian market. In Russia, cheese consumption is 5.9 kg per capita, and the production volume is slightly higher, about 7.7 kg. The demand for raw milk today is largely generated by the cheese market. If something happens to it, in the future it may give a negative price trend, affect both processing and production of milk", the expert said.
Mikhail Mishchenko also stressed that there is a duplication in the cheese market in Russia. The volume of imports is 278 thousand tons, but major importers are also the largest packers and distributors of dairy products. By law, pre-packaged cheese can be called produced, and this slightly changes the production statistics.
