The main influence on their change was the behavioral and social characteristics of consumers that developed during the pandemic. Customers have developed a heightened sense of anxiety, priorities changed and people paid more attention to their own health.

We are observing an increased demand for food and beverages that support the immune system, improve mood, and reduce our environmental impact. This has provided a unique opportunity for brands to develop new products that will forever change the way we eat and drink. 2021 will be a year of innovation marked by significant breakthroughs in nutrition, - said Vince Mcchiocchi, President of Nutrition.

ADM experts have identified the TOP 5 trends that will stimulate innovation in the next year.

First, it is a more active approach to nutrition of the body and mind. Research by the company has shown that 50% of consumers prefer food and beverages that naturally contain a healthy ingredient, and 31% buy more products specifically designed for their health.

In addition, factors such as taste and color have become increasingly important in demand. Consumers are more likely to choose colorful products in bright packaging. Preferences are often given to dairy products with citrus flavor, as this product contains healthy vitamin C. "Nostalgia" associated with your favorite flavors, also has an impact on consumer demand.

The second place in the TOP 5 trends of the next year is occupied by an increasing desire of consumers to take care of the environment. Experts estimate that almost 65% of consumers choose products with the expectation that eco-friendly packaging, a special cooking method, and other things will help them save the environment. In this regard, the demand for products of companies that support various projects to preserve the surrounding world, as well as use this trend in their production, has increased among consumers. This is a key reason why 32% of consumers buy sustainably produced goods.

For example, specialized feed for reducing methane emissions in livestock production helps meet consumer interest in more environmentally friendly protein sources. The next trend is related to the fact that consumers are paying more attention to their health. With about 25% of customers worldwide suffering from digestive diseases, and half of them claiming that such problems have a moderate or severe impact on their overall health, the picture of food demand is also changing. Thus, the pandemic has accelerated consumer interest in the issue of health, and at the same time in products that affect its maintenance.

Researchers have proven that foods that target the microbiome help solve specific metabolic problems, as well as regulate weight change and even support the immune system. This contributes to the emergence and development of innovations in the field of food and beverages through functional solutions such as prebiotics, probiotics and postbiotics that support the function of the microbiome.

Another trend in the consumption market in 2021 is associated with the rapid expansion of demand for plant-based protein foods that people consume as an alternative to the usual proteins. The list of such "innovations" includes seafood, such as shrimps and shellfish, various protein snacks, vegetable cheeses and much more.

For example, new technologies such as 3D printing and protein fermentation play an important role in driving innovation.

An alternative to dairy products was first introduced as an innovation in the plant-based food market. At the moment, their range is expanding, so manufacturers are trying to cover other formats, such as yogurt, ice cream, butter, spreads and cream.

To take a special place on the dairy shelf, plant-based foods must contain more protein than traditional dairy products. This also requires enriching the product with vitamins and minerals or functional ingredients such as probiotics.

Now customers have high hopes for product labels, believing that they accurately reflect all the necessary information about the life cycles of products. Truthful and expanded product information on packaging drives demand for local products, for example, as consumers seek to gain a clearer understanding of wh ere the ingredients in beverages and food come from. Moreover, 26% of buyers in the world search for the country of origin on the label.
