Yuri Sviridenko: the reason for the growth of import of milk-clotting enzyme products to the Russian market in the low quality of domestic products
Today the share of milk-clotting enzyme products of imported origin on the Russian market is 84.3%.
Yuri Sviridenko stressed that the decline in the quality and production volume of domestic enzymes coincided with the collapse of the USSR. The All-Russian Research Institute of butter and cheese making (VNIIMS) began to develop a new technology for the production of rennet liquid enzyme. The tests were completed by 2010, documentation for the products was developed and tests were passed, by the results of which the high efficiency of the technology and product was proved.
- Today, the most popular are rennet enzymes from genetically modified organisms. Unfortunately, we cannot do this, and it requires the involvement of institutions and experts in the field of genetics. We cannot attract them. The fact is that there is another reform in terms of the organization of scientific activities in our country. The Ministry is developing new principles for financing scientific research, and the main principle is that the Ministry will only finance fundamental research. The development of milk-clotting enzyme is an applied development, which according to the Ministry should be financed by the business. It is difficult to expect that such a businessman will appear. I see only one way: the Ministry of agriculture needs to apply to the Ministry of science with an urgent request for research to develop domestic natural rennet enzymes. Otherwise, no one can hear us, summed up Sviridenko, stressing that he hopes the problem will be solved.
